Green bell peppers stuffed with riceGREEN BELL PEPPERS STUFFED WITH RICE

- Rice 200g
- 4 green bell peppers
- Minced beef 450g
- Ratatouille vegetables 200g
- Tomato paste 1table spoon (optional)
- Olive oil: 1 table spoon
- 1 egg
- Shredded cheese 100g

- Cook the rice. Boiled or steam.
- Cut peppers in half and remove seeds and membranes
- Preheat oven at 180°C.
- Cook the meat in frying pan and drain. Add ratatouille vegetables, cooked rice, egg and tomato paste, mixing well.
- Spoon the mixture in half bell peppers and place in oven at 180°C for 40 minutes.
- Remove from oven, sprinkle shredded cheese on each bell pepper.
- Return to the oven for 5 minutes until the cheese has melted
- Allow 5 minutes prior to serving for the preparation to cool down a little.
